Broccoli & Cauliflower Soup












  • 2 potatoes, peeled and cubed
  • 4 cups chicken broth
  • 4 ounces stilton cheese
  • 1 onion, diced
  • 1 tablespoon olive oil
  • 2 heads broccoli, chopped

Directions
  1. First you will add some olive oil to a pan over medium flame.
  2. Add onions and cook until yellow and tender.
  3. Next will add in your broccoli and potatoes.
  4. Stir in the broth, coming to a boil.
  5. Let all of this simmer for at least 20 min.
  6. Stir in cheese, melting completely.
  7. Finally you want to puree the soup in a blender.
  8. Pour into serving bowls.
